Auslese is a German word meaning "selection". The Auslese wines are produced from harvested by hand grapes in late harvest (very mature, then) and pressed separately from other grapes. The Auslese wines are characterized by their sweet aroma. The Auslese wines are also characterized for their sweet bouquet. Moreover, Auslese is, along with the Spätlese in Prädikatswein, the name of one of the German categories used to classify wine.
