Ingredients:
150g mixed mushrooms (cut into squares)



125 g milk (hot)



90 g parmesan



40 g flour



30 g butter



3 egg yolks



3 egg whites



salt, butter, chives

Instructions
Prepare a white sauce melting the butter, adding the flour and mixing well, finally pouring the hot milk.



Take the mushrooms and fry them well. Aromatize them with salt, pepper, parsley and garlic.



Put the mushrooms, the egg yolks and parmesan in the white sauce, mix well and salt everything.



Take some cups or glasses and butter them. Whip the egg whites and put them in the white sauce, pour the mass into the glasses or cups and bake them in oven at 150°C for 35'.



Serve covered with melted butter and chives.
