Everything is ready for "Fermento in Val Tidone - Water, flour and wines in ferment", a market festival now in its fifth edition which will be held on Sunday 4 June in Borgonovo Val Tidone, in the province of Piacenza, starting at 9, in Piazza Garibaldi.

The event, organized by "Borgonovo city of Gastronomy ChefToChef", will bring the excellence of local food and wine to the shadow of the municipal fortress with an eye to the culture and tradition of local specialties: "Water and flour are minimal ingredients, only apparently poor, which form the basis of a diet that over the centuries has fed generations of people consolidating, at the same time, a culture and an identity around which our society has been built - comments Isa Mazzocchi , starred chef of the restaurant "La Palta" in Bilegno (fraction of Borgonovo), vice president of ChefToChef and referent of "Borgonovo City of gastronomy ChefToChef" - Think of the batarò, born as an empirical system to check if the temperature of the oven was right for cooking bread and become, with the addition of cured meats or sugar for the children, a snack that has given moments that have remained etched in the memory of many of us, starting with me".

The culture of food, the promotion of local specialties and food education are the themes that will be developed during the day of 4 June through numerous initiatives and appointments.

From the morning on, the rich program includes, at the foot of the Rocca Municipale, the Mercato del Buono with numerous Piacenza and Emilian excellences: from vegetables to crackers, from honey to bread and sweets, from asparagus to fries, from traditional Modena vinegar to saffron up to the home mills and the typical chisöla with cracklings of Borgonovo Val Tidone.

From 11 there will also be space for families with the installation of the Tree of Wishes, an emotional laboratory for young and old curated by Antonia Lusenti, while at 4 pm there will be the inauguration of the Personal Collection Art Exhibition by Alessio Sterbizzi "A painting for the heart" in the Auditorium of the Rocca Municipale, a fortress that at 4.30 pm it will be possible to discover from the inside thanks to a guided tour by Atlante Guide.

At 17.30 one of the key events of the day will be held in the courtyard of the Rocca Municipale, the conferenceHealth comes by eating... but what are you eating? ”. Prominent speakers will be present such as the university professor Ettore Capri , Angelo Capitelli of the award-winning Capitelli ham factory in Borgonovo, Ludovica and Maria Antonia Lusenti , Luca Farina and the dietician Monica Maj . The meeting will be moderated by the journalist Laura Maragliano , director of "Sale&Pepe".

At 18.30 the "Pane da salame" competition will start, born from an idea by Michele Milani, which will see local bakers competing to win the title: Luca Farina, Stefano Chieregato and Pierluigi Dallagiovanna will sit on the jury.

At 7 pm, the food stands will open in the former monastery area: there will be Manuela and Danila Ratti with their "bortolina", Claudio Cesena with the "sanguis" (dialectal term used to indicate the sandwich), Isa Mazzocchi with the batarò , Roberto Mera with his pastry shop and the Pro Loco of Borgonovo with the chisöla with cracklings. From Ravenna, a land devastated by the floods of recent days, the chefs Matteo Salbaroli and Mattia Borroni will arrive with their piadina, confirming how the desire to restart a territory also and above all passes from one's cultural and gastronomic identity.

Finally, there will be the fermented wines of Vitivinicola Lusenti di Ziano, Vitivinicola Saccomani di Lugagnano, Vitivinicola Cordani di Carpaneto and Braghieri di Strà. For the entire duration of the event Radio 51 Melody will be the soundtrack of the day with its music.
