Sunday 12 March at 10.30 the conference at Palazzo dei Trecento in Treviso. The conference is part of the rich calendar of events of Vinetia Tasting – Il Veneto nel calice, which will bring the best wines from the Veneto to the city.

If there are documents that can explain the evolution of the banquet and its social significance, they are the menu and the wine list: the AIS Veneto conference The grammar of taste: the evolution of the menu and the wine list will investigate their origins and transformation over the years. The conference will be held on Sunday 12 March at 10.30 in the elegant hall of Palazzo dei Trecento in Treviso and will have as speakers Alessandro Scorsone , master of ceremonies at Palazzo Chigi, Alessia Cipolla , curator of the exhibition Note di Lunches: menus in history , Marco Colognese , food writer and food and wine critic, and the President of AIS Veneto Gianpaolo Breda .
The conference is part of the busy schedule of Vinetia Tasting – Il Veneto nel calice , the event dedicated to the best wines of the region according to the tasters of the AIS Veneto guide Vinetia.it , which will take place on Saturday 11 and Sunday 12 March in the halls of the Chamber of Commerce of Treviso and Belluno .
“Wine has always been a fundamental element of our culture and of the Italian style so celebrated abroad – explains Gianpaolo Breda – Events such as Vinetia Tasting and this conference are an important opportunity to get to know the national wine world up close. The wine card represents a mirror of this heritage, which evolves over time together with society: just think of the digital wine cards, new means with which the Sommelier must compete".
“At receptions, form is substance – continues Alessandro Scorsone – The wine list and the menu are precious tools to ensure the smooth running of the meeting. The culture and customs of a people also pass through the rules of etiquette at the table, rules of behavior that have been consolidated for centuries, but which evolve together with society. The best ambassadors of our country are precisely the food and the wine, the fundamental elements of the banquet: we have real masterpieces that often know how to enchant the guests seated at the most important table in Italy”.
“The menus are a theme that fascinates and intrigues – declares Alessia Cipolla – From those of the great characters of history, of the great artists and masters or of simple people, to those of travel, convivial and goliardic, all are witnesses of important moments, from to remember and to take away with you. The Note di Lunches: menus in history exhibition, scheduled at Casa Robegan in Treviso from 4 March to 1 April, brings together 350 menus from 1850 to today, in a journey where the combination of food and wine forms the backbone of the moments convivial and culture at the table. The AIS conference is therefore a great opportunity to underline this ancient and always fascinating union".
“In terms of perception – continues Marco Colognese – the menu and wine list are fundamental signals together with the way in which the guest is welcomed in the restaurant and made to sit down. The language and information used for the first and the precision and accuracy for the second have an importance that is too often underestimated, not respecting the attention to those details that contribute to making the difference in terms of the overall experience”.
During Vinetia Tasting - Il Veneto nel calice , in addition to the conference and the tasting tables , it will be possible to participate in the four masterclasses dedicated to wines from rare grape varieties and to the denominations Lessini Durello, Amarone della Valpolicella and Soave, organized in collaboration with the Consorzio Tutela Valpolicella wines, Consortium for the protection of Lessini Durello wines, Consortium for the protection of Soave and Recioto di Soave wines.
