GRAZIANA GRASSINI SIGNS THE PROSECCO SUPERIORE DI TERRITORIO

The new Asolo Prosecco Superiore comes from a single vineyard, that of Tenuta Aria Valentina, refermented for eight months on the lees

It is widely believed that great wines come from single vineyards, which in themselves concentrate the perfect characteristics for the product to be obtained. It is the concept of Single Vineyard or Cru , to put it in foreign terms. An idea that still little is applied to Prosecco, generally obtained from an assembly of grapes from different areas. This is not the case for the new Asolo Prosecco Superiore Docg Extra Brut signed by Graziana Grassini , who since last year shapes the wines of the Treviso winery Giusti Wine .

One of the most famous Tuscan winemakers in the world, Graziana wanted to bring the essence of the territory into this wine, choosing exclusively the grapes from the Tenuta Aria Valentina vineyard.

« I wanted a different Prosecco, capable of interpreting my explosive character - says the founder of Giusti Wine Ermenegildo Giusti . - I wanted a wine that would interpret my way of being, sometimes counter-current but visionary. This is why I asked Graziana to express herself freely, without any reference to other products already on the market » .

The choice of Tenuta Aria Valentina, one of the most beautiful, is the result of all the experience and sensitivity of the winemaker. " When he did the inspection, he tasted the land and I was very impressed " says Giusti. Tenuta Aria Valentina is located on the southern slope overlooking the plain, in a basin where the plants are exposed to sunlight all day and in the evening they can enjoy the fresh air flow brought by the Piave river. The vineyard that gives the Glera grapes is 13 years old and the vines are grown in the Double Upside Down shape, typical of the area, with a density of 3600 plants per hectare.

The wine is also special for processing in the cellar: after the manual harvest, soft pressing of the Crémant type is carried out, with whole grapes in an atmosphere saturated with nitrogen, from which 50% of free-run must is obtained. The sur lies maturation of the base wine lasts 2 months, followed by sparkling with maturation on the lees for another six months.

The result is a Prosecco Superiore which, as Graziana says, “makes the nose linger on the glass for a long time” because it is rich in aromas that change simply by rotating the glass.

The product is completed by the bottle, characterized by the absence of a label and by the sinuous curves engraved in the glass, which reproduce the profile of the hills.

Bright straw yellow, Graziana Grassini's Asolo Prosecco Superiore Docg Extra Brut is characterized by a straightforward nose, of impeccable cleanliness and elegance, on fruity and floral tones with hints of rocky minerality.

The flavor is fresh, crunchy, savory and fruity, with a persistent finish. Ideal with shellfish crudité and seafood dishes.
