On 20 and 22 October 2025, Rome and Milan will host the two events of the D'OPERA – Quality Heritage of Europe project, promoted by the Consortium for the Protection of Valpolicella Wines and the Parmigiano Reggiano Consortium .
The Roman stage, scheduled for Monday 20 October from Signorvino to Barberini , The event will open at 11:00 a.m. with a masterclass dedicated to Valpolicella DOC and Valpolicella DOC Superiore, reserved for the press and industry professionals, led by journalist and critic Antonio Paolini . In the afternoon, at 5:00 p.m., a second in-depth seminar will focus on the evolution of the appassimento technique in light of climate change and new consumer trends. Each seminar will include pairings with different ages of Parmigiano Reggiano, led by taster Alessandro Stocchi . The day will conclude with a walk-around tasting from 6:30 p.m. to 8:30 p.m. , aimed at both professionals and the public of enthusiasts, during which it will be possible to taste Valpolicella wines and Parmigiano Reggiano in a dynamic and informal setting. Wednesday 22 October will be the turn of Milan , at the Signorvino headquarters in via Dante . The two in-depth sessions will be repeated at 11.00 and 15.30 with the same themes as the Roman appointment and will be led by Alessandro Torcoli , director of Civiltà del Bere.

D'OPERA – Quality Heritage of Europe is a three-year program co-financed by the European Union, created to promote Italy's food and wine heritage and raise consumer awareness of key concepts such as certified quality, traceability, and supply chain sustainability. The planned activities will focus on training and education , offering opportunities to delve deeper into the production processes and sensory characteristics of Valpolicella wines and Parmigiano Reggiano.
