A guided tour and tasting to learn about the Riparbella winery, its wines and its architectural particularities

From the vineyard to the barrel cellar, discovering the biodynamic processing methods and the secrets of the Fengh Shui cellar, the Caiarossa summer continues . “ Discovering Caiarossa ” is an experience aimed at wine lovers consisting of a guided tour and a tasting of four iconic wines.

“To discover Caiarossa - suggests Emilio Mancini , General Manager of Caiarossa - you must first open your eyes wide to grasp its vastness, colors and landscapes and then close them to let the energies of the territory and the charm of its wines envelop you”. The visit begins on the terrace overlooking the historic vineyards, where the history and principles of biodynamic agriculture that distinguishes Caiarossa will be told. Inside the cellar, the bright colors and the philosophy of Feng Shui will then lead you on a journey through the secrets of winemaking . You won't miss the passage through the barrel cellar, the pulsating heart of the cellar, characterized by the red color of the walls and an enveloping atmosphere. The visit will be followed by a tasting of four wines on the terrace: Caiarossa Bianco, Pergolaia, Aria di Caiarossa and Caiarossa , accompanied by a platter made up of a selection of local gastronomic excellences. Although the wines are the undisputed protagonists of this experience, what will make everything even more precious will be the tasting of the wildflower honey and the Extra Virgin Olive Oil of Olivia BIO, a blend of Moraiolo, Leccino and Frantoio which represents the ancient Tuscan tradition.

THE CELLAR

Caiarossa's inspiration comes from the eastern philosophy of Feng Shui, which defined the shapes, colors, lights, materials and orientation of the cellar. The natural slope of the ground has made it possible, in fact, to develop the structure on four levels, which allows "fall" vinification, exploiting only the force of gravity and avoiding any mechanical damage to the grapes. The large windows, located on the sides of the structure and the yellow of the walls guarantee an environment in which you can benefit from natural light from dawn to dusk, a source of positive energy.

The barrel cellar offers new aesthetic aspects combined with functionality. First of all the red color which creates a connection with that land beyond the walls. In the center of the room there is an opening on the ground connected directly to the ground through probes which serve to discharge electromagnetic and electrostatic fields. The temperature and humidity are constantly monitored to allow perfect maturation in the wood. Natural ventilation is also guaranteed by a system of openings connected to the outside and to the woods adjacent to the cellar.

The 4th floor and the basement are dedicated to the aging of wines. After malolactic fermentation, the wines are assembled and then aged in barrique for Caiarossa and Aria di Caiarossa; in wooden barrels for Pergolaia. Since 2016 the winery has been part of the "Toscana Wine Architecture" project, which unites 14 Tuscan wineries, chosen for their architectural particularities.
