Study, creativity and natural fermentation: the Conegliano Valdobbiadene company offers an innovative tasting against the massive interpretation of the glera grape

Orizzonte Circolare is the name of the special tasting itinerary proposed to those who visit Bellenda, a winery founded in 1986 on the initiative of the Cosmo family , in the hills of Valdobbiadene, a Unesco World Heritage Site. Bellenda raises the vine and translates it into wine according to an unconventional, creative and elegant approach, which she shares through many types of guided tours and tastings in the cellar , to discover an unusual face of the land of Prosecco. Circular Horizon is the formula that most of all explores the identity of the estate: it develops in six stages relating to different versions of vinification and sparkling winemaking of the glera grape. The goal is to rebel against the mass interpretation of the variety, returning a good and healthy wine. To do this, the company chooses to produce it by controlling the natural fermentation process of the fruit. In this way we find in the glass the tradition, the thought and the territory that make the vine different from any other. It begins with Metodo Rurale , an IGT Colli Trevigiani created according to the ancestral method on its yeasts. We continue with Radicale , Spumante Extra Brut based on glera from the ancestral classic method that ferments in the presence of marc and does not require disgorgement, thus avoiding the addition of sulphites. So it is (Col Fondo) is a sparkling Prosecco DOCG refermented in the bottle with the addition of must, partly with light maceration, which lends itself to being drunk veiled to fully enjoy the natural deposits. It continues with San Fermo , Prosecco Superiore Conegliano Valdobbiadene, which expresses the most typical characteristics of the morainic hill of glacial origin on which the grapes are grown. Unlike the previous ones, it involves the Martinotti method: it is left to mature in steel and then in the bottle for a few months. The penultimate stop is SC 1931 , Prosecco Superiore Metodo Classico Pas Dosé which takes its name from Sergio Cosmo, founder of Bellenda, and from his date of birth. Fermentation takes place partly in steel and partly in wooden containers without temperature control. The journey ends with Sei Uno , Conegliano Valdobbiadene DOCG Rive di Carpesica which with the fermentation in the bottle stands today as the only exponent of a new and at the same time ancient way of understanding Conegliano Valdobbiadene DOCG. Within the denomination, Bellenda has made its own an exclusive productive niche : that of Prosecco Superiore made according to the classic method , almost an exception to the - unwritten - rule that the Charmat method would like. A choice of style consistent with the important research and experimentation work that characterizes all the wines of the estate and which is expressed with the utmost vivacity in sparkling wines. The company has 35 hectares of vineyard land in Carpesica , a hamlet of Vittorio Veneto of less than 1,400 inhabitants overlooking vineyards and rural buildings. 80% of the Bellenda vineyard is cultivated with glera grapes, while the remainder is divided between the cabernet sauvignon and franc, merlot and marzemino vines, for the production of Colli di Conegliano Rosso, as well as chardonnay and pinot noir for the other methods. classics.
