Visit to the museum, to the ancient vinegar cellars and tasting of the most representative vinegars: a journey to discover a know-how that tells over 400 years of history

Acetaia Giusti is among the Fabbriche del Gusto , the Italian companies that will open their doors to visitors on Saturday 22 and Sunday 23 April on the occasion of the next edition of WeFood , the festival promoted by Italy Post in collaboration with the Italian Touring Club and dedicated to the food and wine excellences of 'Italy. A weekend dedicated to food & beverage companies, real pearls of the Italian heritage, committed to hosting tourists and interested parties to tell about raw materials, traditions, culture and methods that make this sector unique worldwide. Among these , Acetaia Giusti could not be missing, the oldest producer of Balsamic Vinegar of Modena which offers visitors a journey through the history and tradition of the Black Gold of Modena among objects, documents, family memories and, of course, the historic barrels , at best, testify to the very high quality that distinguishes the vinegar that ages in them. “ WeFood Festival is an initiative in which we strongly believe and which we are participating in again this year. Not only because it enhances the excellence of Italian food & beverage, but because it fits into a broader context of food and wine tourism in which experiences dictate the travel choices of Italians and foreigners. More and more travelers select their destinations from an experiential point of view, favoring places where the landscape and culture can be combined with the discovery of local food and wine. In this sense, Emilia-Romagna has an invaluable wealth and, even more so, we believe it is of crucial importance to promote events such as WeFood” – declares Claudio Stefani Giusti, CEO of Acetaia Giusti – “ It is exactly with this spirit that we have designed our Museum, which is open every day of the week to allow interested parties, enthusiasts and travelers to fully immerse themselves in the world of Modena's Black Gold at 360 degrees and at any time ”. The complete visit includes a journey inside the Giusti Museum to retrace the more than four centuries of history of the vinegar factory, present in Modena since 1605 . From the ancient jars used for conservation to the tools of the master vinegar makers, from the bottles and brochures of the early twentieth century to the secular barrels, all still productive and used according to the ancient method of reinforcements and decanting: the visit is a journey through time and space which, through the ten rooms in which it winds its way, allows the visitor to discover the identity of a unique product in the world and one of the main symbols of Made in Italy. In addition to the Museum, it is possible to visit the attics of the Acetaia where the aging takes place, the heart of the production process, and where the unmistakable aroma of the Giusti Balsamic Vinegars is defined. Time and raw material , these are the values with which the visitor comes into contact, essential elements to obtain the high level that distinguishes the products of Acetaia Giusti, together with experience , competence and sensitivity handed down by the Giusti family for 17 generations. To complete the visit, a guided tasting of the most representative Balsamic Vinegars , tasted in purity and according to the line of aging, to understand all the facets, the different harmonies of taste and the possible combinations with food.
