On Monday 13 October, in Trento, Giannitessari presented the Young Chef of the Year award to executive chef Filippo Chignola , on the occasion of the presentation of the Venezie a Tavola 2026 guide by food critics and journalists Luigi Costa and Gianluca Montinaro .
Anna Maria Dal Bosco , co-owner of the winery in Roncà (Verona), paid homage to the chef of the La Casa degli Spiriti restaurant in Costermano sul Garda (Verona) with a magnum of Metodo Classico AD 13.21 Monti Lessini DOC made from 100% Durella grapes.
Born in 2002, Filippo Chignola , along with his brother Lorenzo, took over the reins of the restaurant founded in 1996 in an elegant late 18th-century residence overlooking Lake Garda and the Molini Valley in 2024. The chef has gained significant experience in top-notch kitchens, from the Hiša Franko restaurant with chef Ana Ros to Antonino Cannavacciuolo's Villa Crespi , before bringing his personal interpretation of Mediterranean cuisine, which blends research and simplicity, quality and aesthetics, to the family restaurant.
"It's a true pleasure to present this award to Filippo Chignola," says Anna Maria Dal Bosco , "a professional with a clear and far-sighted vision, supported by a tangible passion for art and gastronomic culture. As a company, we are passionate about supporting projects that interpret the present to look to the future, creatively narrating the region. These are common traits in our approach to winemaking, today represented by AD 13.21 , the latest addition to Giannitessari, dedicated to lovers of rare and fine wines, which we are delighted to present to Filippo."
The Monti Lessini Metodo Classico Dosaggio Zero from Durella grapes is a limited edition, with only 200 magnum bottles available by appointment. AD 13.21 means "double vintage," as it's made from the blend of two vintages, 2013 and 2021, after the sparkling process, rather than before as is customary. Each bottle is sealed with sealing wax, a first in the sparkling wine world, and housed in an elegant painted wooden case, available for €300.
For sixteen editions, the Venezie a Tavola guide has showcased the food and wine excellence of the Triveneto region, from Alto Adige to Trentino, from Veneto to Friuli, from Venezia Giulia to Istria. The 2026 edition reviewed 200 restaurants, 45 wines, and 35 typical products.
