 
                        WINE NAME: IGP Lazio Bianco. GRAPE VARIETY: 70% Bellone and 30% Pinot Grigio. VINTAGE: 2021. YEAR OF PLANTING: 2013. PLANTING DENSITY: 4,000 plants per hectare. VINEYARD AREA: 5 hectares. ALTITUDE: Approximately 350 meters above sea level (Cori LT). SOIL: Medium texture tending towards clayey and rich in skeleton. HARVEST TIME: On average, last week of August based on the ripeness of the individual varieties. VINIFICATION: The grapes are harvested in crates then pressed with a soft press. The grapes are pressed and left to ferment at a cold temperature of 14/15°C for the duration. AGING: Aged in stainless steel tanks for a few months, subsequently aged in bottle for 3 months. ALCOHOL CONTENT: 13.50% Vol. CHARACTERISTICS: Straw yellow color with golden reflections, good structure and elegant flavor. Delicate and fruity aroma with notes of yellow peach and hawthorn. SERVING TEMPERATURE: Serve at 10/12° C. PAIRINGS: Smoked fish, fish soups, caviar and bottarga, shellfish and first courses based on molluscs, raw fish and stewed white meats, but also with cheeses.
