In youth ruby red with purple reflections, which in maturity tends to garnet.
Aroma:
The phases of aging –steel, barrels, earthenware jar and bottle– determine a marked aromatic breadth.
Taste:
The sensations are perceived net but nicely balanced from both the olfactory and gustatory point of view.

Food pairings:
It gives the best of itself with red meat, game and stews.
Service:
We recommend decanting before serving and serve at a temperature of 18°C, in large glass of fine crystal with typical tulip shape.
Best age for consumption:
It should be drunk within 8 years after harvest
Additional Information:
All individual steps are followed and cared with attention to detail.
The harvest: grapes are picked by hand at the right level of phenolic ripeness and transported in boxes to the winery.
De–stemming: very delicate in grapes and subsequent crushing with calibrated pressure of the berries.
Fermentation: with selected yeasts, at a controlled temperature in steel, with pumping over and delestage.
Fining: in the first phase in steel, later in barrels with medium toasing and terracotta jar.
Bottling: is done without too narrow filtration operations, that while making the wine brilliant, would weaken unambiguously its structure.
During the evolution in the bottle any sediment formed by crystallization of potassium salts, naturally contained in grapes, are to be considered a spontaneous manifestation of a wine with powerful structure and high concentration, also accentuated by aging in earthenware.
